Recipe: Chocolate and raspberry cookies
Although its spring time and berries aren’t really in season, this great recipe utilizes frozen raspberries so that we can make these cookies all year round!
I had such fun making them – I really enjoy trying new recipes and this one was definitely a winner!
Ingredients
- 125g butter
- ¾ cup firmly packed light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup plain flour
- ¼ cup self raising flour
- 1/3 cup cocoa
- ½ teaspoon baking soda
- 90g dark chocolate, chopped coarsely
- 125g frozen raspberries
Method
Step one
Preheat oven to 180 degrees celcius. Grease and line oven trays
Step two
Beat butter, sugar, egg and vanilla in a small bowl with an electric mixer until combined. Stir in sifted flours, cocoa and soda, in two batches. Then stir in the chocolate and raspberries.
Step three
Drop tablespoons of mixture about 5cm apart onto trays, flatten slightly. Bake cookies about 12 minutes. Stand cookies on trays 5 mins before transferring to a wire rack to cool.
